Despite numerous fad diets and exhaustive workouts, her weight issues persisted until she discovered Dr. John McDougall’s “The Starch Solution,” which advocates for a low-fat, high-carbohydrate diet focused on foods like potatoes.

Initially skeptical, given her prediabetes, Nelson was desperate for change. She delved into the science presented in McDougall’s book, which debunked common misconceptions about carbohydrates and emphasized their benefits in weight management and reversing diseases. Encouraged by the promising approach of plant-based diets also supported by doctors like Neal Barnard and Michael Klaper, Nelson embarked on a new nutritional journey.

Transitioning to a plant-based diet involved major dietary shifts. Nelson and her family started with simple, familiar meals—spaghetti with tomato sauce, baked potatoes, and burritos filled with rice, beans, and salsa. The results were swift and profound. Within a month, Nelson had lost 9 kg (20 lbs), and after 14 months, she shed a total of 32 kg (70 lbs).

Her transformation wasn’t just physical; Nelson experienced enhanced energy levels, deeper sleep, and her cystic acne cleared up. Her health markers improved drastically; she was no longer prediabetic, and her blood pressure, cholesterol, triglyceride, and thyroid levels normalized. Her husband, initially hesitant, lost 22 kg (48 lbs) on the diet, alleviating previous aches and pains. Their children, a teen and a preteen, also thrived on the new diet.

Embracing her new lifestyle, Nelson became a beacon in the vegan community. She shared her journey and recipes through cookbooks and on social media, earning the moniker “Plantiful Kiki.” With a YouTube channel boasting 247,000 followers and significant followings on Instagram and Facebook, she offers a wealth of vegan recipes that are not only healthful but delicious, ranging from dairy-free casseroles to lentil “meatballs.”

Nelson’s journey from struggle to health advocate highlights the transformative power of dietary change, proving how a shift in eating habits can profoundly impact one’s health and wellbeing.
